Michikuni Tokaji is a member of the Zakuri collective and he forges blades for both the house named brand of Zakuri but also for the Karaku brand.
Tokaji-san hand makes each knife using old techniques and processes. Each one a bit different from the next. He uses the very highly regarded AS steel as the core element of these blades.
AS, or Aogami Super, is one of the most popular high carbon steel alloys among Japanese knife makers. It is known for the very high edge retention and fine edge it is capable of achieving. Wear resistance is about average and it is quite easy to sharpen. It is a very reactive steel so wiping down and drying should be done after every use. The core steel has been clad with a soft iron laminate that has the carbon forging scale left on. This kurouchi finish adds a fine aesthetic look to the blade while adding another level of protection to the reactive iron.
We are very fond of the bunka shape, finding it to be a very versatile knife for many operations on the cutting board. Bunkas are well suited for cutting, slicing, and chopping, while their tip affords them the ability to take on smaller ingredients and get into tight spaces. They are also a good alternative to a petty for making garnishes and undertaking detail work of all kinds.
