Since discovering this one man blacksmith shop in Sanjo City, we have become the first USA distributor of these fine knives made by Kawamura-san. And we are glad we did!

These are really well made and great performing knives. Easy to use. Easy to sharpen and really easy on the eye!

They are constructed using Hitachi White Paper #1 steel with a cladding of stainless steel. The cladding is finished in a pressed wood type finish which looks great and really aids with food release. It also make the knife relatively easy to care for.

The heat treatment of these blades is first rate. They are hardened to 61 Rockwell. The grind is well done and goes quite high on the blade face. Edge profile is on the flat side with a tip shape reminiscent of a funayuki style knife. This gives the knife a wonderful ability to take on delicate tasks like garnish preparation. The grind is quite thin behind the edge but not to the point of feeling delicate. The edge is sharp right out of the box, but a quick visit to a medium stone will result in a razor-like cutting surface. Very impressive indeed.

The knife has a heft and stiffness to it that we really like. It is certainly not a laser, but it cuts with an assured and controlled feel, exhibiting no steering or wedging on harder products. It is mated to a custom octagonal handle made from stabilized Buckeye burl.

    Great heft and feel in hand - feels tough as nails. Excellent profile and tip. Steel sharpens like a dream, but definitely feels like white #1 when it comes to edge retention. This is a very unique knife and I love the finish on the cladding. Also really cool that he is a one man shop. This is definitely one that will come to work with me.

    Exquisite knife. Mine came with an Isaiah Schroeder custom blue maple handle. The knife has a unique pressed-wood pattern that grew on me. F&F are good all-around. But what sold me was performance.The Yoshi is upper midweight knife that is a fantastic pusher and chopper. The blade has enough weight to do much of the work. And being white #1 it gets ridiculously sharp. The tip is one of my favorites on CKTG. Pointy and narrow for fine, detailed work, though for some it might take some getting used to because of its length.Downsides? White is not the best for long edge life and the Yoshi will microchip a bit if you are not careful. These are minor quibbles. This is one of my favorite knives, esp with the custom handle. Not many other offerings on the site will outperform this one.

    beautiful knife , great fit and finish the handle is nicely done and definitely adds to the feel and comfort of the knife . OTB edge was good, sharpens quick and takes a razor edge. balance is good feels great in the hand even with hours of use. really enjoyed the blade shape, the tip allows you to have real finesse when needed . the grind is very good nice and thin behind the edge but still fairly robust, and food sticking is almost none existent . overall i am very pleased, this was my sixth knife that i have purchased here along with several other items and i always feel i get my moneys worth and recommend this site to anyone in the market for good value and top quality product. thanks again CKTG.
