We are always looking for new blacksmiths and makers to add to our ever growing inventory of fine kitchen knives. The constant search took us to Sanjo City, where we discovered Kawamura-san who works from his one-man shop in this center of knife making. We are now the first distributor of his knives in the USA which he brands Yoshimune.
These attractive knives are made with White #1 carbon steel and are constructed san-mai style with a stainless steel cladding. The inner core steel (hagane) is one of the most popular steels made by Hitachi used in knife making. Yasuki Special Steels (YSS) are named after their place of origin, and are produced from iron sand. White #1 is a higher carbon sibling of White #2. It has very good edge holding and a high working hardness. This means it can be ground to exceptional sharpness, which it retains for a long time.
Kawamura-san adds a great looking hammer finish to the cladding that really sets these blades apart from others. The stamping ends at the shinogi and fades into the satin-finished primary bevel. The addition of a finely crafted custom handle made from dyed stabilized hard woods transforms this knife into a functional piece of art.
