Yoshimitsu Tamahagane Gyuto 240mm. Yoshimitsu hamono is based in southern Japan near Nagasaki and is run by 5 brothers who sell mostly in their own geographic area. The business has been in continual operation for over 150 years. The knife here is made using Tamahagane steel on the edge which is mainly used by sword makers and is legendary in Japan. It's vary rare to source this material and this 240mm gyuto is made for us exclusively by the Yoshimitsu brothers. There is a thin protective coating on the knife blade that you can remove with acetone. Otherwise it will slowly wear off the knife through regular use.

Please note that these knives often have tiny finishing imperfections consistent with hand hammered knives. The Yoshimitsu brothers make their own Hagane and Jigane, and also do their own cladding. It's amazing that they can take sand iron and turn it into these knives but please be aware that there are often hammer marks and scratches in the cladding and this is considered normal for these knives. The custom handle on this particular knife was made by our woodworker Bens Bites and is made with wenge, walnut and maple woods.

    Knife was sharp out of the box. Had to touch up the edge with a diamond steel and after 2-3 strokes it is scalpel sharp. Wish I had something like this when I did my surgical rotation. I plan to "attack " some onions this weekend to see if they succumb easily.

    This is my first knife from chefs knife to go. I have to thank Mark for his excellent suggestions and for his prompt service in shipping. I have not used the knife yet but have waited five days to use this fine cutting instrument. Why did I waste my time in five days to get my hands on this little beauty? The fit and finish are totally impeccable. This is probably only the first of several orders from this most excellent company. if you are considering a purchase from chefs knives to go I would have no hesitation to call Mark and get his advice. He certainly knows his knives and his steels.
