Another new and rather exciting addition to our store is this line of knives from new blacksmith Mr. Sasaki and finisher/sharpener Mr. Kanaoka. They are making their first foray into knife production under the banner of Young Samurai. These men have learned from two of the best knife makers in Sakai: blacksmith Itsuo Doi and sharpener Mr. Yamatsuka. We also recently added Miss Kubota to do the hand chisel engraving to the knife and she's doing very nice work.

The first of their offering are yanagiba knives in three lengths. This is the mid-sized option that is probably the most versatile for kitchens and boards of average size. The blade is a Ni-Mai construction using White #3 as the hagane and a soft iron as the jigane. It is a single bevel knife so it will only work for right-handed users. White #3 is a very good alloy for use on single bevel knives. Like its sibling whites, it is extremely tough yet can take a very fine edge, which is why they are favored by sushi chefs for their yanagibas. White steel is reactive and needs care to avoid rust and corrosion.

We are very impressed with the quality of grinds, fit, and finish inherent in these knives. The finish on the blade is really well done. The hand-chiseled kanji is made by another apprentice and is of equally high quality. It spells wakamusya, which is Young Samurai in Japanese.

    Always wanted a yanagiba but never could pull myself to do it bec of the price. But seeing the pedigree of the makers of this particular knife and at the price, I had to pull the trigger. Not gonna lie the edge was pretty rough when I got it, but from what I know typically Japanese knives traditionally don't come with great edges Bec the knife maker believes the user should put their own edge of it. So I took it to the stones and it sharpened up pretty quickly, and maaaaan did it get sharp.if you know how to sharpen and want a new toy, I highly recommend.

    This is my first Yanagiba, and what a pleasure.
    Aside from the excitement of participating in the firstfruits of the young apprentices, the knife I got came in very good shape, sharp ootb, and beautiful kasumi aesthetic (so much so that even my wife commented positively!).
    I got it as an excuse to make my wife some home-made sushi rolls, and needless to say, it cut fish like a dream.
