Yoshimune White #1 Gyuto 210mm

Kawamura-san from Yoshimune lives and works in Sanjo City. When CKTG proprietor Mark recently traveled to Japan, he was very impressed with the prototype for these knives. We are now the first retailer in the US to carry them!

Gyuto knives are the Japanese equivalent of the classic western chef knife, a jack of all trades in the kitchen. This example has a medium length blade measuring 214mm. The blade height is a generous 50mm for extra hand to board clearance. This knife is no laser for sure. In fact it has a really nice heft and solid feel. The spine has a nice reduction in size to the distal taper that comes in just before the tip. The grind is very well executed and comes quite high up the blade side. The edge is fairly flat and the tip is reminiscent of a funayuki style knife.

It is ground with a 50/50 bevel and comes really sharp right out of the box. A quick trip to your favorite stone will take it to the next level and will result in a very sharp, easy to maintain edge. Fit and finish are really well done with a nicely rounded choil and polished spine. This a great all round performer and a knife we highly recommend.

    Just as I expected sharp right out of the box. Little bit of stone work and a strop and u could shave with it!

    This is an absolutely beautiful knife, the hammer marks are insanely pretty and the handle looks great as well. But with knives it's not all about aesthetics. The knife Is really sharp and cuts easily through anything I cut with it. As a professional chef it gets used a lot and I'm very happy with how it performs! Awesome knife, good price and great service from chefknivestogo, it only took a week from ordering to arriving at my doorstep from America to the Netherlands.

    General feel: 5+Ease of sharpening: 5+ (the heat treat is insane on this shirogami 1)Edge retention: 4 (again, insane heat treat, no decrease of sharpness whatsoever after a week of home use and several potatoes and onions after)Wedging: 4+ (surprisingly no wedging whatsoever despite the choil profile, although it is ultra thin behind the edge)Food stickiness: 5 (the only things that still stick to the blade are diced potatoes)Profile: 5+ (seriously, look at that tip)NB: 8/10, sharpest OOTB of all the knives I bought on CKTG.
