The Yahiko Sanjo White #2 Nashiji Gyuto 240mm is made from the ever popular Shirogami #2 carbon steel (White #2) which is clad, san-mai style, with a jigane of a softer iron. The hagane is hardened to about 61 HRC by our blacksmith using just his eyes and experience to judge the color of the red hot steel to get it right. He hammer forges the outer cladding and gives it a very attractive and unique kurouchi/nashiji finish. Some nice hand engraved kanji can be found on the blade side, which adds to the fine look of the knife.

The geometry of the blade is very well executed with a fairly high grind. While the spine is a bit thick out of the handle, it tapers very quickly to a very fine tip. 240mm gyutos are the perfect kitchen cutter, if space allows. These knives are the most capable of all blade designs in terms of general abilities. They can tackle almost any ingredient and are easy to handle and control by most users. The balance is fairly blade-forward, and will fall into the pinch grip area of most users. The handle is made from burnt chestnut with a buffalo horn ferrule. It is a D-shape but should not be a problem for left-handed users.

    Overall, this is a nice knife. The d-shaped handle fits very nicely into a mid-sized hand. The White No. 2 is relatively easy to sharpen took a very keen edge. Edge retention is as expected from this steel and performs well. There are a few improvements that would make it exceptional though. Out-of-the box sharpness was awful. Slicing cleanly through standard paper was a challenge. Additionally, the blade edge was not evenly ground. There was a section in the middle of the blade that was over ground by about 1mm. This issues was resolved with some work on the stones. Also, the spine was quite rough at the pinch-grip point, making cutting uncomfortable. Again, this issues was resolved with a little work. If these issues did not exist, I would have rated the knife as excellent. I did not expect this from a $260 knife. As for CKTG, the order was processed, shipped, and delivered very quickly.
