Over the years we have sold and used thousands of different knives. We are very proud of the knives we are selling under our in-house Yahiko brand. It is our opinion that these knives are among the top 10% of those we have ever sold in terms of quality and functionality.
We have a fondness for Shirogami, or White, number 2 carbon steel. It possesses great edge resilience and wear resistance. It sharpens up very well and can be treated to a high level of hardness. The hagane (inner core) is covered with a softer stainless steel jigane (outer layer) in the san-mai style. This process leaves the inner core exposed along the spine. The cladding is left with its natural carbon finish on the upper blade road while the lower road is given a semi matte appearance which contrasts with and enhances the polished cutting edge.
We specified the profile to have a nice flat area from the heel to about 2/3 along the edge, where it transitions into a gentle belly. The tip is fine but not too pointed. It is quite a stout knife which will appeal to users who find thinner styles to be too fragile felling. The blade is matched to a traditional octagonal ho wood and buffalo horn handle.Weight: 6.8 ounces

This is my first JK and so far it is everything that I imagined it would be! Out of the box the amazing build quality was obvious. Handling the knife confirmed the details that were read about this Gyuto. The knife is amazing to look at and it feels so comfortable in my hand. CKTG’s sharpening service gave me an amazing edge. I tried my new Gyuto on some vegetables and it was precise, smooth, and effortless - the knife just wants to do all the work. A patina has already started to from. I am so looking forward using my new Gyuto more and more!
