This line of Yahiko is from a single blacksmith that has been making blades of various sorts for 50 years. His specialty is actually sickles and he works in the shadow of Mt Yahiko. Hammer forged with White #2 steel, these nicely clad knives have a simple, sandblast finish which gives them a frosted appearance. The steel is hardened by the smith to about 61 Rockwell and he does this process in house and by experience. He told me that he has to judge the color of the red hot steel to get it right and it took him a while when he was younger to perfect the technique. Please note you can sometimes see a little of the scale on the knife right at where the tang enters the handle. We hope you enjoy these knives from small blacksmiths as we continue to travel to Japan to find them.

    This is a very well made knife, has a character, a personal touch of a smith and artisanship. It is light, very sharp, such a pleasure to use cutting onions, tomatoes, garlic as well as raw chicken and other meats is a breeze. Highly recommend, will not be disappointed.

    I bought the knife used in the CKTG video. The discounted price was too good to pass up and I wanted to see if I might be interested in the 240. Well, I sure am. Great knife, especially for the price.The Yahiko Shimo 210 is extremely thick coming out of the spine - the thickest of all my knives - but tapers quickly on the front third of the blade to a thin an exquisitely performing tip. The heel is powerful enough to handle most anything.The blade is rustic, but charming. The handle is a typical plain buffalo horn ferrule and ho wood. I wouldn't describe fit and finish as great, but it's perfectly fine. It's iron clad and in the middle of the reactivity scale.The Yahiko Shimo flat-out performs. Thin cuts, thick cuts, soft ingredients, hard ingredients. Reminds me of a less polished Koishi but with a little more clout. Highly recommended for those who don't mind fully reactive knives.
