- verified customerI bought the knife used in the CKTG video. The discounted price was too good to pass up and I wanted to see if I might be interested in the 240. Well, I sure am. Great knife, especially for the price.The Yahiko Shimo 210 is extremely thick coming out of the spine - the thickest of all my knives - but tapers quickly on the front third of the blade to a thin an exquisitely performing tip. The heel is powerful enough to handle most anything.The blade is rustic, but charming. The handle is a typical plain buffalo horn ferrule and ho wood. I wouldn't describe fit and finish as great, but it's perfectly fine. It's iron clad and in the middle of the reactivity scale.The Yahiko Shimo flat-out performs. Thin cuts, thick cuts, soft ingredients, hard ingredients. Reminds me of a less polished Koishi but with a little more clout. Highly recommended for those who don't mind fully reactive knives.
