Yoshihiro Yauji is a young blacksmith we recently discovered while we were visiting the famed Takefu Knife Village. We are, in fact, the first retailer to be selling his wares in the USA and we are very proud to be doing so.
Yoshihiro Yauji makes his blades from Shirogami White #2 steel with a cladding made from a soft iron. The blade features a very attractive hammered kurouchi finish. It has a classic yanagiba grind with one edge and a slightly concave back side. The blade is definitely thinner than other yanagibas, which makes for a knife that is light in your hand and very nimble in its abilities.
This is a knife intended for left-handed users so the grind is placed on the left side of the blade and ura on the right. The cladding on single sided blades is placed on the grind side with a slight wrap over onto the ura side. The lovely damascus cladding is further enhanced with some very fine kanji characters. The edge features a small micro bevel for added toughness and to make sharpening a bit easier. Fit and finish is of a high standard and the blade is coupled to a very nice rosewood octagonal handle.

CKTG is at heart a small business so the service is personal. They are one of the rare companies that actually dispatch the order the same day as receiving it and provide tracking information. It is great to deal with an individual by name and itís evident that they take pride and love in what they do.
Had a problem with one of the products and they went out of their way to resolve. I would highly recommend dealing with this company. Itís nice to find a company who cares and they will get me as a return customer.
Mark is great at answering questions for knife nuts of all levels. His service is second to none. Really appreciate the time he puts into every email as well as the free forum he hosts.
Great experience working with Chef Knives to Go. Quick delivery, and they are great about returning emails. I'm actually waiting on my second knife from them. I'm sure there will be more to come.
