Yahiko knives are made exclusively for us at CKTG by a well-respected maker located in Sanjo City. This is one of the centers of blacksmithing in Japan, having emerged in the early 17th century from the need for employment for local out-of-work farmers. Within a short time, many blacksmith shops were established and their reputation grew as they expanded their offerings into other items such as farming tools, blades, and other metal implements. We are fortunate to have several makers in the area producing knives for us under our in-house brand.
This great looking
gyuto is constructed from VG-10 stainless steel, quite easily the most popular alloy used in stainless knives coming out of Japan. VG-10 is a high carbon content steel that possesses great edge taking and holding characteristics as well as being very easy to maintain. The inner core, or hagane, is clad with a softer stainless steel which is hammer finished and polished to an almost mirror gloss. Some lovely hand chiseled kanji elements further enhance the looks and value of the knife.
This is a very well-constructed and -finished item. The design, materials, and grinds are top notch and belie the very affordable price. We started this line as way for newcomers to enter the world of high quality Japanese knives at reasonable prices. The Yahiko VG10 Damascus
