The Yahiko Shirogami Hairline Gyuto 210mm is made from the ever popular Shirogami 2 high carbon steel. It is also commonly known as White #2, so named for the color of the paper the steel comes wrapped in. Shirogami steel is made by the Hitachi Company and is available in three varieties: 1, 2, and 3. The numbers refer to the amount of carbon in the alloy. The lower the number, the higher the carbon content. Knives made with Shirogami 2 take an extremely fine edge, but do not tend to have the edge retention of other alloys. However, they are fairly easy to sharpen compared to others.

The inner core is laminated with a soft iron to dampen the blade and protect the more fragile inner core. As it is a soft iron it will also discolor or corrode, so care must be taken to clean and dry the knife between uses. The outer layer is given a very nice hairline or brushed satin finish. A good looking traditional octagonal handle made from white oak and buffalo horn is a perfect fit for this understated blade. We are really pleased with the results of our collaboration with Mr. Mazaki and we believe that you will be delighted with these great performing kitchen knives.

    Pretty knife! Spine is rounded and polished, something Iím not used to seeing. Knife has a great taper to tip. Initial edge was average but I expect to take any new knife to a stone to put on an edge I want and did that with great ease. Heat treat is great, takes really nice edge and held up well after a session on the board. I was looking for a 210 with a little more heft without losing ability to do fine work and with this tip, if I I pinch up a bit this thing kills. Took out my 240 Kono hd2 to compare while chopping some carrots. The Kono did chop through better but not by much and if I used the upper 1/2 of Mazaki, there was no difference. Being OCD, there was a small edge felt between handle and ferrule and butt of handle was a little smaller then iím used to but I never use a tennis grip and a little sanding took care of handle/ferrule issue. Overall, couldnít be happier with the looks, proportions, balance and performance of this knife. Iíve been leaning towards 210ís lately and this is now my everyday go to knife.

    One of my favorite everyday knives. Very versatile and excellent performance. Has a very stout feel and handles any prepping task with ease. The grind and profile are near perfect to me and heat treatment is even better. Knife gets crazy sharp and holds its edge well. One of the best all around knives I've used.
