The Yahiko Shirogami Hairline Gyuto 210mm is made from the ever popular Shirogami 2 high carbon steel. It is also commonly known as White #2, so named for the color of the paper the steel comes wrapped in. Shirogami steel is made by the Hitachi Company and is available in three varieties: 1, 2, and 3. The numbers refer to the amount of carbon in the alloy. The lower the number, the higher the carbon content. Knives made with Shirogami 2 take an extremely fine edge, but do not tend to have the edge retention of other alloys. However, they are fairly easy to sharpen compared to others.
The inner core is laminated with a soft iron to dampen the blade and protect the more fragile inner core. As it is a soft iron it will also discolor or corrode, so care must be taken to clean and dry the knife between uses. The outer layer is given a very nice hairline or brushed satin finish. A good looking traditional octagonal handle made from white oak and buffalo horn is a perfect fit for this understated blade.
