Yahiko is a new in-house brand of kitchen knives that we are having made for us by some very well-known blacksmiths working out of Sanjo City. Yahiko is a large mountain outside of Sanjo City, Japan, that holds a beautiful Shinto shrine at its base.
The knife featured here is part of a new line which are constructed with a core of Hitachi White Paper 2 and clad with a soft stainless steel outer layer. The jigane (outer layer) is wrapped around the hagane (inner layer) using a hammer forging technique called san-mai. This involves cladding the core steel on both sides of the blade, but not wrapping over the top of the spine. Thus the jigane is exposed at the spine and edge. The stainless cladding receives a very nice matte finish which accentuates the lovely polished edge and exposed Shirogami #2 core.
Bunkas are general purpose knives adroit at tackling a wide range of common kitchen tasks. Their reverse tanto profile results in a dexterous and delicate tip and a unique and eye catching aesthetic. These can be used any time a gyuto or santoku might be called for. Since banno bunkas have fairly flat profiles they are most adept at push cutting and chopping rather than rock chopping.

I've had this knife for a week and I'm loving it. Came really sharp; have only stropped it so far and it flies through food. Fit and finish are out of this world. Excellent attention to detail. I really like the height of the blade. Well worth its price. Highly recommended. And CKTG is always a pleasure to do business with.
