These great looking knives are made with a core of Shirogami #2 steel, which has a cladding of a soft stainless steel. The cladding is given a really nice frosted kasumi finish that is the perfect foil to the polished core steel edge.
We are really impressed with the grinds on these knives. They start quite high up on the blade and fade to a really thin edge that is most impressive. They come out of the box very sharp. The spine and choil are both nicely rounded which goes along with the superb fit and finish of these really lovely blades. Some well-done hand chiseled kanji elements perfectly match the aesthetic qualities. We are very impressed with the overall look and feel of this knife.
The performance echoes the great looks and finish. It is a sterling cutter of all kinds of ingredients. At 240mm it is perfect knife for most users and instances. It is easy to control and very well balanced with a very nimble feel. That feeling is enhanced with the extremely well made octagonal handle made from rosewood with a black pakka wood ferrule.
Wonderful looks are matched by high levels of performance in a package that we find to be very individual and exciting. Highly recommended.
