Yahiko knives are made for us by a well-known blacksmith working in Sanjo City. This is one of the centers of knife making in Japan and if you look at our product code number you may be able to discern who this anonymous blacksmith is!
The knife boasts some of the best looks we have seen in kitchen cutlery. It is made with a core of Hitachi White Paper 2 and clad with a soft stainless steel outer layer. The jigane (outer layer) is wrapped around the hagane (inner layer) using a hammer forging technique called san-mai. This involves cladding the core steel on both sides of the blade, but not wrapping over the top of the spine. The blade has a stunning frosted semi matte finish applied to the jigane that emphasizes the highly polished cutting edge.
