The Yaxell Dragon Fire Gyuto Knife is made from a one-piece construction using nitrogen-enriched Carpenter BD1N steel, hardened to a Rockwell Hardness of 63. This high hardness helps with the reduction of a rolled-over edge. It exhibits first-rate edge retention and overall sharpness. BD1N steel is known for its durability and ability to be sharpened to a razor edge and maintain that edge long after other knives have gone dull. The 16-degree bevel creates an edge that is razor sharp and durable enough for professional use.
This 240mm gyuto is average in its dimensions with an edge length of 238mm coupled to a blade height at the heel of 49mm.
