Yexell is a large company based in the heart of knife making, Seki City. They produce a wide variety of kitchen knives using many different steels. This is an example of their Dragon line which is constructed from nitrogen-enriched American BD1N steel, hardened to a Rockwell Hardness of 63. It is a mono-steel, laser-cut construction.

BD1N steel is known for its durability and its ability to be sharpened to a razor edge and maintain that edge long after other knives have gone dull. The 16 degree bevel creates an edge that is razor sharp and durable enough for professional use.

The great looking handle is constructed from linen-canvas Micarta with three stainless steel rivets. The canvas material is dyed red and finished to a very high standard. It will last a lifetime…which is actually the length of the warranty!! The end-cap and bolster of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.

The end result is a kitchen knife that is very durable with extreme edge retention along with Japanese styling and sharpness. NSF certified.

    As a Home cook and wanting to get into Japanese knives, I chose this for its French Sabatier like profile as my first Chef knife in place of the Miyabi Kaizen. Have been using this for about 9 months now and just recently took it to the stones. Was not sure what to expect with BD1N steel but am impressed with the edge retention and its ability to get super sharp... Still working on my sharpening skills but was able to bring back the edge easily to like new. A little weighty in the hand but feels good overall. Nice thin blade with a beautiful red handle.
