Posted By: ManuAs a Home cook and wanting to get into Japanese knives, I chose this for its French Sabatier like profile as my first Chef knife in place of the Miyabi Kaizen. Have been using this for about 9 months now and just recently took it to the stones. Was not sure what to expect with BD1N steel but am impressed with the edge retention and its ability to get super sharp... Still working on my sharpening skills but was able to bring back the edge easily to like new. A little weighty in the hand but feels good overall. Nice thin blade with a beautiful red handle.
