The Yauji Damascus White #2 Deba
165mm is a knife built to process fish. The very thick spine and tall stout blade are perfectly suited to the task of filleting fish and, in some instances, poultry. It is a single sided blade so the cutting angle is very acute, and thus exceedingly sharp. This does come with some caveats however. Maintaining and using single-edged blades requires a completely different set of skills over double-edged blades. Sharpening in particular is a more specialized task and should only be attempted by someone who has experience with these types of knives. Also, as this is a single bevel blade, it is intended for right-handed users.
Yoshihiro Yauji makes these knives from Shirogami #2 steel which he heat treats to 61-62 Rockwell. He then clads the inner core with a softer steel in a damascus style to further reinforce and protect the hard White #2 hagane. The cladding is finished in a great looking suminagashi veneer which has a beautiful frost-like appearance. As these are carbon blades, care is required to keep them from corroding.
The handle is made from ho wood and features a water buffalo horn ferrule. This is a beautifully crafted knife at a great price made by a young but very talented blacksmith. We are pleased to be the only seller representing the brand in the USA.
