Since we introduced the Yahiko brand of kitchen knives to our customers we have received an overwhelming amount of praise for these interesting knives. We currently have three smiths making the different sub lines for us and each of them has produced some really outstanding blades at very affordable prices.
The smith responsible for the White #2 Hammered line was actually a sickle maker until he turned his hand to making kitchen knives. We are really glad he did. These are some really well designed and built knives. The core of Shirogami #2 steel is clad in a soft stainless steel to protect the inner steel from shocks and corrosion. The stainless cladding is given a great looking kurouchi hammered finish. It is both functionally and aesthetically pleasing. Some lovely hand engraved kanji elements finish off this great looking blade.
The blade is quite flat over at least 2/3 of the edge length. It comes in longer than the stated length at 250mm and the blade height of 51.5mm is commensurate with this length. The blade has an S grind with a symmetrical 50/50 bevel.
