The Yahiko AUS8 Santoku is, as the name suggests, made from the stainless steel that gives it its name. This alloy is often times compared to 440B steel. It contains close to 0.75 % carbon, 13-14 % chromium, molybdenum and vanadium at about 0.25 % each. It is very easy to sharpen and takes a razor edge. Itís reasonably tough and wear resistant and it has above average stain resistance.
This is a great entry level santoku which is aimed at the home cook or line chef seeking a low cost, well made, and easy to maintain knife. It is one knife that, in most cases, can do it all. There is a good reason this style of knife is become a staple in western kitchens. It has a profile that welcomes all styles of cutting styles. It is compact and stiff while offering increased finger to board clearance. The western style handle is constructed from black micarta and is mated to a stainless bolster and attached with three stainless rivets to the full tang.
