Here is the type of blacksmith we always love to find. His name is Ueda-san and he resides in Yamanashi Pref. Chefknivestogo is the first dealer outside Japan that is currently offering his knives. He was born in Kanagawa Pref (near Tokyo) and has moved to the deep countryside to realize his working style. He built his new workshop by himself and has moved there. He's now set up and is ready to make four smaller sizes of kitchen knives.
You can see from the photo that he is using traditional tools including an old style of wooden fuigo (bellows) to blow winds into a furnace when hardening. He is producing every material except steel, and is even cutting trees on his property to make charcoal and his original handles. He would like to establish his own style wherever his knives are introduced and sold, namely that all knives have his original handles and have one simply designed Kanji character on the left face.
