Well, it took about a year till getting back to you about this new blacksmith called Mr. Ueda in Yamanashi Pref. I hope that you will remember him . When introduced before, you told that you were not ready to import any fry pan but ready to import knives from him, if my memory is correct. What I understand is that he was born in Kanagawa Pref ( near Tokyo ) and has moved to the deep countryside to realize his working style. Since I asked him last July, he told that he built his new workshop by himself and has moved there. And he was ready for 4 smaller sizes of kitchen knives in the beginning, and is ready to accept any bigger sizes like Gyuto on request.
I hope that you will find him taking a old style of wooden fuigo ( bellows ) to blow winds into a furnace when hardening. He is producing every material except steel like he cuts trees by himself to make charcoal and his original handles. He would like to establish his own style wherever his knives are introduced and sold, namely all knives have his original handles and have one simply designed Kanji character on the left face. He seems to be making flying pans as well.
