The sujihiki we are presenting here is another beautiful knife creation from the hands of Marko Tsourkan. He is a recent addition to our cadre of American-based knife makers that we have been expanding this year. Marko has been making fine kitchen knives and other blades from his workshop located in NYC for the past six years. He originally studied with the esteemed blademaker Devin Thomas.
We are extremely pleased by the quality and attention to detail that his knives possess. It is obvious that our customers agree, as these handmade beauties do not sit on the shelf for long!
This 285mm sujihiki is constructed from A2 steel. A2 tool steel is an air hardening, cold work steel that has a 5% chromium content and about 1% carbon content. After heat treatment, the steel will offer a hardness in the range 57-62 HRC with good dimensional stability.
The grind and overall blade geometry is perfectly executed, endowing the knife with the appropriate abilities to carve or slice in a single action. This really could make a very good stand in for a traditional gyuto. The blade is mated to a wonderful looking and feeling handle made from an extremely rare block of old-growth thuya burl.
