Tsubaki Kori Blue #2 Gyuto 210mm Custom. Kori means "ice" in Japanese and the nice sand blasted finish on this great looking knife certainly has a frosty feel to it. This blade is made entirely by hand by young blacksmith, Mr. Miyazaki. He works from his one-man forge on a small island off the southern coast of Japan close to Nagasaki where he hammer forges a very small line of specialized blades using Blue #2 carbon steel.
The inner core of Blue #2 steel is wrapped in a softer iron in the san-mai method of awase. This leaves the Blue #2 edge and spine exposed. The cladding is then treated to a great looking sandblasted finish. We have added a sweet custom octagonal handle to this unique blade.
