The Tojiro MVS Color Series of knives are very user friendly. They are constructed from a tough and easy to maintain stainless steel featuring a high percentage of molybdenum and vanadium. These knives take and hold an edge that is sharp out of the box and relatively easy to resharpen, even for a novice. The nicely shaped blade is thin and light. There is a very simple poly grip handle that is durable and easy to keep clean.

Sujihiki knives are a Westernized version of the classic yanagiba, used to slice all kinds of meat, poultry, and fish. This long, slim, and flat blade glides through these proteins with ease and efficiency, normally only requiring a single stroke to complete the cut. The thin blade reduces friction and thus minimizes food sticking....even with raw ingredients like carpaccio or sushi. In fact, this is a great sushi knife for those intimidated by one-sided blades.

Even if you donít find a daily need for this type of knife, the price and quality of the Tojiro MVS Sujihiki 240mm makes it an easy purchase. The Tojiro MVS Color Series is also a great place to shop when looking for a gift for a friend or loved one who likes to cook.

    Disclosure, I bought this thinking of using it as sort of an XL petty. That being said, I've had the knife for a few days now and I put it through some prep paces. It definitely excels in all-around slicing, I've run through some onions and peppers with it but it's fairly long and not really suitable for veg work. The area where I've seen the best performance, and what I ultimately bought it for, is fabricating meat. I've blazed right through a couple cases of tenderloins, cutting filets, breaking down strip loins into steak, sliced through a few cases of random chicken breasts and it's been phenomenal. I do like the grippy/tacky feeling to the handle, but I cant say I love the dimensions or shape of it. OOTB sharpness was standard Tojiro, nothing amazing, nothing terrible, took a great edge on our house stones. Overall it's a decent knife, and for $40 on clearance? Great. Seriously thinking about picking up the 240/270 gyutos as well just for beater knives.
