This Tojiro DP VG10 Gyuto 180mm 3 Rivet is an all-purpose knife that is ideal for home users who want something that's easy to handle and control and not too big. It is very light and nimble but still has a good feel in hand and a reassuring stiffness to the blade.

Tojiro uses the ever popular VG10 steel for these knives. It is easily the most popular stainless alloy in the kitchen knife industry, and for good reason. VG10 "super steel" is composed of carbon, chromium, cobalt, manganese, molybdenum, silicon, and vanadium. These relatively small amounts of other metals give the VG10 steel its most important properties, such as its ability to hold an edge coupled with great durability. The core is clad san-mai style with a softer stainless steel for added strength and ease of maintenance.

This is about the smallest size that gyuto style knives are made. At just 180mm, it is like a tall petty or long santoku, not just in dimensions but also in abilities and feel. People who like a shorter blade will be intrigued by this knife as it serves so many purposes and is so adroit at those many tasks. Add the lighter weight and low price and you have a knife that is a perfect starting place for new chefs or home cooks looking for their first Japanese knife experience.

    This knife has been my beater for work and handled everything I’ve thrown at it . Very thin and very light came sharp otb . The price makes this knife unbeatable. I take care of it like any other but I’m not too worried if I were to lose it . Ordered a 2nd one because my first has served me so well . Seriously can’t recommend it enough . Tojiro hit it out of the park with the dp line

    Blade is very thin, light and really holds an edge. Didn't come as sharp as I like but it didn't take long to correct this. This has ended up to be one of my most used knifes.
