Aogami Super steel is clad in kurouchi finished softer stainless steel. The construction dramatically reduces the maintenance associated with iron clad blades yet retains all of the high performance characteristics of Aogami Super steel.
With a 50/50 grind and edge bevel, this knife is more aptly called a
Sujihiki, or the Japanese equivalent of a Western Slicer. Employing a compound grind with a very tall and acute edge bevel, these knives get incredibly sharp and are excellent performers in this pattern. Fit and finish is quite high, and the smoother Kurouchi finish reduces drag through softer proteins vs. Takeda’s classic line.
