Mr. Takeda’s knives are highly sought after by collectors and chefs alike for their singular aesthetic character and exceptionally high performance for those who prefer taller knives. 50/50 compound grinds and tall edge bevels define the geometry of the Aogami Super Stainless Clad series by Takeda. As the name implies, Aogami Super, or “AS,” is found at the core of these knives which receive a stainless lamination, greatly increasing the anti-corrosive properties and ease of maintenance associated with these blades. The AS core allows the smith to put an incredibly acute edge on these blades, which can be taken to high levels of refinement and exhibit excellent retention. Very thin and light, these knives fly through ingredients. The smoother kurouchi finish on the Stainless series also reduces drag through ingredients, enhancing the performance of this fantastic petty.

    Most of my knives are Takedas, so despite having decided on a stainless “super steel” for a blade that would undoubtedly be cutting into a lot of acidic food, I decided to pull the trigger on this one as soon as it came back in stock (I believe it sold out within a few hours). This is a fabulous petty, extremely sharp and nimble, and I appreciate the little Takeda touches, e.g. “slopping” plenty of epoxy where the tang meets the handle. I use baking soda on a green Scotch-Brite after use on all of my carbon steel blades; if you keep them dry, reactivity shouldn’t be a problem.

    Just added this to the mix to fit in between my small Damascus paring knife and medium-sized Bunka.
    Falls through food unlike any other and is a super-handy size.
    I do very much appreciate the stainless cladding. Non-stainless is a little more "traditional", maybe, but this seems to have the qualities of that plus the benefits of stainless.
    The function of this knife is truly unmatched.
    I often reach for the larger medium-sized knives that I have, but the cutting ability of this one can't be overstated.
    It's new, but my guess is that I'll start using it more and more.
    Getting this was definitely a good move.

    I love this knife and knife maker. I reach for this one all the time and it gets way more use than I anticipated. So sharp. Holds its edge well. Easy maintenance. Great for so many small jobs when I don't need to be wielding a big gyoto.

    My second Takeda knife and it doesn't disappoint! Don't understand how but these knives just fall through food and make food prep an absolute pleasure. If you can afford to buy one, do it, there's no buyer's remorse here!

    The blade is everything I hoped for: super thin, light, sharp, perfect shape. I have a Takeda stone on order and hope it's as easy to sharpen as Takeda San makes it look in the video! It's good looking too, nicer than the pictures. Fit and finish is great and the smooth kurouchi finish is really nice. A classic look without being overly rustic. Food release is good if not quite as amazing as some reports I'd read. The AS steel edge doesn't seen very reactive at all so far. My only complaints are the ergonomics. The blade is nice and tall (I requested the tallest one they had) but the board clearance is actually less than other knives due to the way the blade meets the handle. The spine being almost flush with the edge of the handle. Also I find the octagonal handle rather uncomfortable. I would much prefer a D shape, or even just oval. Hopefully I'll get used to it because aside from the handle, it's the best knife I've ever used,

    Sweet petty. Bought this knife because the profile is a close match to the Henckels 140mm Santoku that the wife and daughters reach for first (the steel and style for me). Functionally it's a great knife so far - it's agile and sharp oob (haven't had it long enough to need to sharpen it). Deducted 1 star for finish. Glue slopped all over the handle - particularly the ferrule. And there is a 4 long bare streak in the black finish.
