The Takeda NAS Nakiri is part of the Stainless Clad collection that features a core of AS steel covered with a layer of softer stainless steel. The cladding is done in the san-mai style, in which the outer layer is applied to either side of the blade but not over the spine. The san-mai name refers to the Japanese translation meaning three flat things. Constructing the knife this way offers the practical and visible advantage of a superb cutting edge with a corrosion resistant exterior. Keeping the exposed portion of the non-stainless edge and spine of the blade clean and dry after each use is still a required practice.
Nakiri style knives have very thin and straight blades. They excel in delicate vegetable cutting and chopping tasks. The Japanese word translates into knife for cutting greens. The shape of a nakiri differs according to the region of origin: knives in the Tokyo area are rectangular in shape, and knives in the Osaka area (like this one) are called kamagata nakiri and have a rounded corner on the far blunt side. Like all Takeda knives, this is an oversized blade as compared to the average. It is a tall 60mm in height at the heel and is 175mm in length.
