This 240mm gyuto has a core steel forged of Aogami (blue paper #2) steel, and a softer iron damascus cladding. As the knife is fully reactive, it will patina over time, so care should be taken to avoid this issue.
Tanaka gyutos are real performers because of their fantastic convex grinds. This allows the blade to effortlessly slip through food items while minimizing food sticking. All of the knives from Tanaka come with a very sharp edge out of the box, and will most likely not need much more than a stropping to achieve a truly wicked sharp edge.
