Handcrafted in the storied cutlery-making city of Takefu by third generation blacksmith Takeshi Saji, this 240mm yanagiba
is an excellent example of traditional Japanese cutlery. Featuring a Hitachi Ginsan stainless steel hagane and a stainless steel jigane, this knife is not prone to the discoloration typical of carbon steel knives. The Ginsan steel hanage is hardened to 61-62 HRC, giving the knife both great edge taking and a bit of toughness. These knives are traditional single bevel knives, making them appropriate for right-handed users only and requiring a sharpening procedure unique from double bevel knives. The d-shaped ho wood handle with black buffalo horn ferrule is well made and cleanly installed. Users should expect some dimensional variation to occur as each handcrafted knife is unique.
