Although called a sashimi by Tanaka, this lovely example of the classic Japanese sushi knife is better known by its more common name, yanagiba. Yanagibas are very thin slicing knives made especially for cutting fish and other raw proteins with one movement. This enables the chef to slice the most delicate ingredients while inflicting minimal damage to the cellular structure. It also results in slices that are surgically precise and aesthetically pleasing.

Shigeki Tanaka forges his Kasumi line of blades from the ubiquitous Aogami #2 carbon steel. It is one of the most popular metals used in the manufacture of high quality Japanese kitchen knives. Renowned for taking and holding a very sharp edge, it is also fairly reactive. So you must take care to clean and dry this knife regularly while using, and absolutely before storing.

The length of 270mm makes this a perfect choice for most kitchens and situations. Although yanagis can go to 330mm and beyond, this is good size for most people. The core steel of this knife is hardened to about 60 HRC so it is not a chippy blade. It will need some love on a strop fairly regularly, but make no mistake, it will get you through the long work day with ease. Yanagibas are single-bevel knives, so right-handed users only!

I got this hearing it is a great blade with a less than perfect handle. The F&F is flawless to my unscrupulous eye and there is nothing substandard about the handle--the red logo is a sticker.
I've used it for two weeks and when I think it is dulling it is because I'm still getting to know it. Sharp, Strong, weighty. I highly recommend this blade for those seeking performance without frills.
