Yoshikazu Tanaka is a name that resonates with many kitchen knife users around the world. He has been forging knives for 50 years and his creations are commissioned by many leading knife brands for their high-end offerings.
He operates out of a workshop in Sakai and forges upward of 30 knives a day, to be further refined and finished by some of the best sharpeners and finishers in Japan.
While you will see his name associated with many different brands, this is his own makers mark and we are very please to be able to offer our customers some of these finely made kitchen knives.
We are starting with a small range made with Blue #1 and featuring a fine kurouchi finish. First off is this lovely Santoku.
The blade is clad in a soft iron to aid with strength and shock absorption. The cladding retains the forgers scale which is further refined to a fine finish. This aids with corrosion resistance and food release. As well as lending a great look to the blade.
The fit and finish of the blade is top class. We particularly love the beautifully radiused choil and rounded spine. Which together with the finely crafted custom handle result in a knife that is heirloom quality.
