How can you not love this knife? Looking like a mini santoku
, its cute appearance hides its true power.
The KoBocho Classic blade (Ko means “small” in Japanese) is just 100mm long so it’s more suited to the smaller jobs in the kitchen. Such as slicing garlic, chopping herbs, or mincing shallots. But what it does it does ever so well. Hiding behind that gorgeous rustic exterior is a blade fashioned from Aogami Super
steel. The softer carbon steel cladding features a lovely kurouchi finish which protects and strengthens the inner steel while aiding in food release.
The knife weighs in at a scant 2.4 ounces and is super thin, just 2.3mm at the heel. As with all of Takeda-san’s blades, the Banno KoBocho is entirely made by hand...by eye. So each blade will be slightly different and entirely unique.
Completed with a handsome Stained Maple Octagonal and black pakka handle, this little knife just wants to be held and used.Weight: 2.4 ounces
