The Takayuki Hammered VG-10 Wa Petty 150mm is a variation on the hammered line of knives that use VG-10 as the core steel. This is the non-damascus version. The core steel is one of the most popular stainless alloys used in the production of kitchen knives, for good reason. VG-10 is also known as V Gold 10, and it boasts excellent corrosion and wear resistance as well as great edge retention. It is a tough steel which, if correctly hardened, is also resilient enough for most users and uses.
VG-10 knives are reputed to be harder to sharpen than some other steels but the smiths at Takayuki have developed a special tempering technique which results in a hardness of 60 HRC while being much easier to sharpen. The VG-10 core is wrapped in a softer stainless steel to add resilience and strength to the cutting steel. The cladding is given a great looking tsuchime appliqué and a fine satin finish down to the polished exposed core steel.
The blade is matched to a traditional octagonal handle fashioned from rosewood and black pakka wood.
