This is a new offering from the master craftsmen at Sakai Takayuki, one of Japanís oldest and most revered blade making companies. Its history spans over six centuries and during this time it has attracted the very best Sakai based craftsmen to produce blades and knives of unparalleled quality and design. The knife we are featuring here is part of their top stainless steel line, the Ginryu Premium (Silver Dragon) series.
All of these knives are made with the finest Swedish Steel sourced from Bohler-Uddeholm. They are made entirely by hand and each knife is finished by master sharpener Mr. Yamatsuka in the traditional Japanese style. AEB-L is an excellent stainless alloy used in a variety of applications, including razor blades. The steel is highly rust resistant and offers exceptional sharpness, excellent toughness, edge retention, and ease of sharpening. It is often favorably compared to, or even surpasses, the very best carbon steels.
The blade is made from a single piece of steel in the Honyaki style. Honyaki, or True Forged, knives are the most difficult blades to make. The failure rate is extremely high and only the very best blacksmiths are capable of making these truly remarkable knives. The blade is ground to perfection by one of the top sharpeners in Sakai City and then polished to a mirror finish. It is a classic yanagiba design intended to slice raw fish with a single stroke and no pressure. It is a single bevel design so it will only work for right-handed users.
We have sourced this knife without a handle and are supplying it with this stunning creation made from dyed buckeye burl. It is oval in shape. The black fitted saya is included.
