The Takayuki Ginsan line of knives is a recent addition to our store. We think that they are destined to become a popular one too.

They are made with Ginsan steel, which is gaining a strong following among many knife users. Ginsan, or Silver 3, has a high carbon content that boasts a fine grain structure. This endows the blade with a very carbon-like feel. It also makes it much easier to sharpen than most other stainless alloys. The Ginsan inner core is clad with a soft stainless steel which is treated to a very attractive nashiji, or pear skin, finish. This treatment then blends into a satin finish at about the primary grind point.

Petty style knives are fun and useful implements to have around the kitchen. They can tackle a multitude of tasks due to their short length and slim pointed tips. Garnishes, filleting proteins, and chopping herbs and smaller ingredients are all within the scope of this versatile knife.

The construction is a full tang, bolster-less design. The handle scales are made from red dyed pakka wood and secured with three stainless rivets. It is a simple design but one that feels great in hand and makes for an easy to use and maintain cutting tool.

    This is my first petty, and I'm definitely in love! The fit and finish on this is gorgeous, super sexy. The size occupies a great middlle ground that my small gyoto or a nice paring knife can't. I haven't owned a knife utilizing ginsan steel previously, but it has performed well thus far. It has reasonably good edge retention (compared to my hap40 knives), and sharpened back up easily.

    Definitely worth every cent and more!
