Firstly, I love this knife. It allowed me to break down Salmon at work with a confidence I had been lacking theretofore. There is a learning curve due to its' single edge, but that is quickly overcome. It is truly a beautiful knife.
Yet, and this is a minor quibble, when I think of Japanese craftsmanship, I think of near perfection. I understand this may be a less expensive, starter knife but that should not affect some basic knife making standards. The blade itself is not 100% true-it may be 90,95% true, but there is a wee curve that affects sharpening. It's doesn't, to my eye, affect cuts, but it is a niggle my OCD twinges at.
As I mentioned, I love this knife and am very pleased with it, but mayhaps my expectations of Japanese craftsmanship were a little let down.
