Tanaka knives are made by Shigeki Tanaka. He works with a small crew of artisans in a small traditional workshop in Miki City, one of the centers of knife making in Japan. He is the son of master blade maker Kazuyuki Tanaka. After his father's passing, Shigeki took over the family business and started making a name for himself and furthering the reputation of the family business. He uses the traditional methods to make all of his knives which we really enjoy.
The knife featured here is from a small run of Blue #2 knives with a nashiji finish that we are putting custom handles on. The very popular Blue Paper #2 carbon steel is hardened to 60+ HRC. The core steel is covered with softer steel to add strength and lightness while reducing the need for careful maintenance. But do not forget it is a carbon core so it still needs to be dried and treated with care after use. The blade face is given a very attractive nashiji, or pear-skin, finish.
We have made these special blades available with some finely crafted custom handles made by Brandon, one of our talented wood workers. As each one sells we will replace it with another and change the picture accordingly.
