Master blacksmith Hinaki-san hammer forges some of the finest knives we stock at CKTG. He uses a variety of steels in his various lines, many of which are advanced PM or stainless alloys.

This lovely petty is fashioned from ZDP189 powdered metallurgical steel. It has an extremely high content of carbon and chromium. ZDP189 is particularly liked for its fantastic wear resistance and ability to be hardened to very high levels. Hinaki-san takes these blades to a rating of 65-66 HRC and clads the steel with an outer layer of softer stainless steel using the san-mai method. This leaves the spine and cutting edge exposed while protecting and strengthening the blade face. Because of the stainless cladding and core, this knife is very easy to maintain.

This is a classic petty in terms of dimensions and shape. The knife has a versatile profile with a long, sweeping cutting edge for chopping, a gentle belly for rock cutting, and a thin pointed tip for detail work. The stunning damascus blade is matched to a carefully selected custom handle made by our skilled woodworkers. These are very special knives that will perform every bit as well as they look.

    Expensive but outstanding knife. Extremely sharp out of the box. Very versatile. I have other knives which are more chef's knife size, but this is excellent for slicing or cutting up smaller things. Very light. For those with larger hands the handle may be a bit short. It's becoming one of my favorites, along with the Kanehiro santoku.

    Phenominal version of this epic knife. Edge retention is incredible! I've used so many different petty knives over the years and this one absolutely puts the rest to shame. Amazing!!!

    I've been buying knifes for some 20-25 years, as a collector! I tried some ten brands (Henckels, Hattori, Konosuke, Misono, Kasumi, Shun...). This is the best thing I have testes so far! GOURGEOUS steel, it cuts like nothging have I ever tried! And I'm absolutely shure it would became far better, after some good sharpening session!Extremelly light, perfect balance... you cut everything like if you was cutting hot butter!It is a very expensive knife! But it a long life aquisition. And - trust me - you will not need another knife after this one! And all the knives that you own today seem dull!
