Aogami Super Steel is made by the Hitachi Metals Company and is the go to steel for customers that want top performance in a high quality carbon steel. With an HRC of 65, some blacksmiths won't be able to heat treat the steel properly but Sukenari can.
This Sukenari has a double sided edge that is 50/50 and has a nice Kiri tip. In fact, the very fine blade and thin profile go together to create a knife that is very nimble and easy to use. It's a blade fit for almost all uses. The knife has a versatile profile with a sizable sweet spot for chopping, a gentle belly for rock cutting, and a thin pointed tip for detail work.
We are making some of these formidable blades available with selected custom handles made by our favorite woodworkers. We will update the pictures and specifications to match the latest available combination.

This is my 3rd Sukenari ZDP189 chef knife (210 & 240 mm). Extremely well made, stunning look with the Damascus and custom handle. These are the knifes that people notice. OTB I would give it an 8/10 for sharpness . I have not had a chance yet to touch it up but I am sure, like the others, it will take a razor sharp edge and maintain it for a long time. These are more on the expensive side but well worth it for the look, feel and top notch performance. You won't be disappointed.
I just feel compelled to tell you that yours is the most ridiculously informative site of this nature I have ever come across.
