We are very fortunate to have a new blacksmith create this line of kitchen knives for us at CKTG. Ogata-san is a young blacksmith working in Takefu Village in Japan, home of some of the world’s greatest blacksmiths. In fact for the past 5 years he has been serving his apprenticeship under one of these greats and now has branched out on his own.

The new Ogata line of knives are constructed from Hitachi White #2 (also called White Paper #2 or Shirogami #2) which is heat treated to 61-62 Rockwell range. The core steel is covered in a softer outer layer which is then given a really unique kurouchi finish. Unlike other similar finishes this is achieved using a gas flame rather than a charcoal fired forge. The knife is spring hammer forged and hand sharpened on a large sharpening wheel.

The area under the upper blade path is where the lovely damascus steel secondary bevel shows and it contrasts beautifully with the kurouchi and White #2 steel.

The knife is of average size and weight with a rounded profile and fairly tall height. The oval rosewood handle with black pakka wood ferrule are the perfect and simple foil to the ornate and rustic looking blade.

    Background: I've been cooking for my entire adult life, I recently graduated culinary school and I work at Minnesota's first all-woodfire restaurant, In Bloom. I received this from my father as a birthday/graduation gift after we spent hours on the site narrowing down options. Ok, onto the blade.

    Out of the box, this thing is rustically gorgeous. I had been using a shun classic prior to this, and the feel was just such an improvement. This knife is comfortable, sturdy, light for it's size and you can feel the quality and care put into it. It cuts like a dream and after a month of use in our high volume environment (cutting anything from brunnoise mirepoix to whole legs of venison) it has kept up performance wise and developed a nice patina. Both our sous chefs and our chef owner have made comments on how nice a blade it is. Highly recommend, and grateful for CKTG for giving people like me the opportunity to own blades like this.

    Love it. The finish is super flashy and looks great. Handle is nice and the knife is well balanced. Out of box sharpness wasn't quite what I was expecting. Spent some time on stones and now it works great. Great option if you're looking for a nice looking gyuto with a substantial blade height.
