Takayuki Shibata makes his blades out of R-2 stainless powdered steel which is made by the Kobelco Steel Company. It is also known as SG-2, a rebrand of the steel which is sold by Takefu Specialty Steels. R-2 has become a popular stainless alloy among knife makers and users. The extremely thin blades are made possible by the use of R-2 steel, which has the ability to be sharpened to a steep angle. This attribute results in an amazingly fine cutting edge. The R-2 steel is hardened to 62-63 on the Rockwell Hardness Scale, which is very impressive.

The inner core R-2 steel is forged with a hagane (outer layer) of a softer stainless steel. A lovely hand executed rough finish is applied to this layer to aid in food release, especially in items with a high water content.

Kotetsu translates to ďIroncladĒ which was the name given to the first ironclad battle ship in the Japanese Navy. It had a very distinctive pointed bow which allowed it to carve through water with ease and efficiency. This bow shape is the predominant feature of the design of all of these blades.

The fit and finish of his knives is noteworthy, so we thought we would dress one of these up and install a beautiful custom handle on it from our woodworker. It's like putting George Clooney in a tuxedo!

    5  Amazing Knife, February 20, 2019

How good is this blade? It is simply laser perfection. I had ordered an R2 Kotetsu Bunka and I was so impressed that I immediately ordered the 210mm Gyoto. The R2 stainless steel is forged amazingly thin behind the edge and the Kotetsu design lends to an amazingly sharp tip that excels in draw cuts. Not a good rocker, but the flat profile is great for push cuts and pull cuts. Great balance, simply stated elegance and a joy to use. I LOVE this knife~!
