Shibata Kotetsu R2 Gyuto 210mm Custom has a great looking Kiritsuke shape and is one of the best cutting knives we sell. Takayuki Shibata makes use of the popular R-2 powdered stainless steel alloy to fashion the inner core of his line of R-2 knives. R-2 steel is manufactured by the Kobelco Steel Company. It is powdered steel which exhibits really good strength, excellent wear resistance, and the ability to take a very sharp edge. The same steel can be found in other knives but it is called SG-2. These are the same alloys but the SG-2 brand is resold and rebranded by Takefu Specialty Steels.
The R-2 core is given a cladding of softer stainless steel. A great looking, hand-executed rough finish is applied to this layer to aid in food release, especially on items with high water content. These are laser-like blades with extremely well-finished grinds and edges. The spine and heel are nicely smoothed for comfort and the out of the box edge feels like it was refined on the very best natural stones.
We thought it would be a good idea to partner this blade with a handle custom made by our woodworker, Isaiah Schroeder. The result is a perfect marriage of form and function. Add in its one of a kind nature, and you have a knife that ranks high on the desirable scale for any knife connoisseur or collector.
