Mr. Takeda’s knives have risen to cult status amongst knife enthusiasts for their incredibly thin, light hand-forged blades that sport a singular aesthetic and unique interpretation of Japanese and Western patterns.
In his AS Stainless Clad line, Mr. Takeda produces knives that use expertly treated Aogami Super steel at their core. Around the core, Takeda forges layers of softer stainless steel to enhance ease of maintenance. The kurouchi finish on these knives is smoother than Takeda’s Classic line, though the aesthetic character of the knives remains intact.
Takeda’s Sasanoha pattern is very similar to most other makers’ gyutos in height, though noticeably shorter than Takeda’s standard gyutos. With 50/50 compound grinds, these knives are excellent choices for left or right handed users that enjoy the characteristics of Takeda's knives but prefer a more classic gyuto profile.

    The knife its self is very thin, very flexible like a boning knife and extremely sharp. The knife is one of the sharpest I have ever received and cut my leather knife roll while putting it away. The knife is extremely sharp out of the box and extremely light. Compared to a miyabi or shun it is quite a bit lighter. Compared to a french knife it is light years away. The knife breezed through an onion and a tomato with no problem. I purchased this knife to do some of my more intricate cuts at work and it will do just that with ease and precision. For my heavier tasks I still keep a 8 in chefs knife on my station but for the most part I am very happy. it moves through items like butter and create clean cuts. I would not recommend this knife for someone who is going to be mincing a lot or doing a lot of cutting on harder objects as the blade has some flex. Not enough to bend while cutting but I could certainly get a salmon skin off with no problem. Still getting used to the light weight but would highly recommend for anyone cutting a lot of fish or veg

    This is an amazing piece of craft. The knife is beautiful in every sense and has an amazing finish in both blade and handle. The level of detail in its craft is unbelievable and of course it is razor sharp out of the box.

    This knife is an exceptional performer. Otherwordly food separation. One of the sharpest out of the box edges I have seen. My only complain is that it does have a fair amount of flex. This doesn't bother me much in use, but does when sharpening. If you are going to buy one though, be sure you take the time to learn how to sharpen it. Takedas knives are very different that others.

    Wow, what a knife! Out of the box edge is impressive, sticking into my cutting boards. Handled everything i threw at it on a busy shift at a sushi bar. I was concerned the sushi rice would stick to the kouruchi finish but it didn't. Sashimi slices were also a breeze. Knife was light and nimble. However, i let my sous chef use it and he chipped the tip, easy fix but still heart breaking on such a beautiful knife. Couple stones later and finished on a 10k and leather strop its begging for more.
