Here is a new knife for 2020: Okeya Damascus new santoku called Ryu-Rin. Ryu means dragon and Rin means scales, and our friend Aki Fujiwara who came up with the design wanted to express the Damascus pattern to look like dragon scales.

The santoku is the most popular knife shape in Japan for home cooks. It's versatile and easy to handle and works well on a large variety of tasks.

The blade is made with Ginsan steel, also known as G3, which is a high quality stainless steel that is easy to care for and holds an edge well.

The handle on this knife is made from ebony wood with a nickel silver spacer that gives it great eye appeal in addition to the excellent cutting performance of the blade.
