The traditional santoku blade geometry features a sheep's foot tip which essentially draws the spine down to the front of the blade. There is very little clearance above the horizontal cutting plane when the blade is resting naturally from heel to forward cutting edge. This provides a more linear cutting edge, so the santoku has limited "rocking" travel in comparison to a Western-style chef's knife. Santokus are becoming more popular in many Western kitchens as a replacement for a small chef knife or gyuto.

This 165mm blade is about average in length for a santoku but at 4.4oz is on the heavy side of the scale compared to other knives of this style and size. The core Shirogami alloy is covered in a soft iron cladding which features a unique “lightning” kurouchi finish. Below this upper portion the damascus finish is revealed which then gives way to the primary bevel and the exposed White #2 core steel edge. The blade is carbon steel so it needs to be kept clean and dry to avoid corrosion.

A simple oval handle made from rosewood and black pakka wood balance out the look and feel perfectly. This is a great new line of knives from an up and coming blacksmith, one we feel will become a household name in the future.

    This knife was given as a wedding present, along with some honing accessories. I was pleased with the appearance, fit, and finish of the knife. The blade was thin, thin, thin, this should cut like a laser. The blade appearance was very dramatic with the dark and figured cladding. Very attractive handle that was comfortable in the hand and the feel was nice and encouraged fingering the choil.

    I was looking for something in between my gyuto and 150mm petty and, after much deliberation, decided on this. I can see why most of the knives from this maker are sold out! To begin, the fit and finish are remarkable, and the aesthetics are great. The knife truly shines where it counts--the steel and edge! The balance is perfect and the knife feels very light and nimble in the hand. No wedging with potatoes or onions! A lot of knife for the money. Love it!
