A nakiri knife, also known as a nakiri bocho, is a Japanese-style knife used mainly for chopping vegetables. Characterized by its straight blade edge and squared off tips, the nakiri knife allows you to cut all the way through to the cutting board without having to use a horizontal push or pull. Thin and light in weight, the nakiri knife is ideal for prepping all types of vegetables. In fact “nakiri” translates into knife for cutting greens! This style of knife is becoming more popular in Western kitchens and rightfully so. It is a light and nimble cutter, easy to use and sharpen due to its very flat profile.

Ogata-san makes these from the well liked Shirogami #2 carbon steel. This is a really great knife steel which is quite easy to put a good edge on while being able to hold that edge through a tough day in the kitchen. The core (hagane) steel then receives out layers of a softer iron which protects the core and adds strength and lightness to the blade. The outer (jigane) layer is given a really unique kurouchi finish. The lower grind then reveals the damascus style layering which contrasts really well with the rest of the blade.

The nicely finished rosewood handle adds a simplicity to the design and functionality of this well-made knife. We are really pleased to be able to offer these lovely creations from this new blacksmith. Looks, performance, and a great price. Very nice indeed!

    Ordered on Friday, delivered on Monday in perfect condition.A really beautiful knife, light and nimble. Good finish on handle and blade.Time will tell how it holds, but for now I am very happy with the service and product.

    This is my first, well second, nakiri. I tried a budget brand first but it arrived with a manufacturing flaw in the handle so I returned it and stepped up to this one. I love this knife and have zero regrets. It's sharp out-of-the-box and looks beautiful. It is nice and light in the hand and easy to work with. It makes most vegetable work so much easier than using a gyuto or paring knife. I highly recommend this knife to anyone in the market for a nakiri.
