We have a thing about bunkas. There is a certain look and feel to these knives that is both intriguing and purposeful. The kiritsuke tip is definitely a point of attraction to many, as is the smaller size and rounded edge profile. Bunkas are very versatile blades, able to take on most small- to medium-sized ingredients. They combine the best attributes of a nakiri and santoku in a very interesting and visually appealing knife.

The Ogata White #2 Bunka 165mm is the first in a series of knives being made for us by new artisan blacksmith, Shungo Ogata. He is just starting out on his own after completing his training under a leading Takefu blacksmith.

Ogata-san uses White #2 steel as his core element in the construction of this line of knives. The steel is hardened to 61-62 Rockwell. He then hammer forges an outer layer of soft iron in a damascus style. The upper portion of the blade receives a really unique kurouchi finish which he calls Lightning Kurouchi. The secondary grind is where the damascus shows through leading to the primary grind which reveals the core Shirogami 2 steel edge.

This is great looker in all respects and it performs as well as it looks. Unique, fresh, and yet grounded in tradition, the new Ogata line of White #2 knives are a great addition to our growing portfolio of kitchen utensils made by up and coming blacksmiths from Japan.

    I've had this for about 3 months now, it's my first carbon steel knife and just, wow. This thing is light as a feather in your hand. The thicker spine keeps it from flexing too much, however the grind goes down to almost nothing resulting in a scary sharp edge that makes carrots weep. Unlike my VG-10 knives, if this ever dulls, a few passes on my Shapton 5k bring it right back. W2 is really amazing. It is fully reactive and patinas quickly, but of course I don't mind as I'm a home chef and can afford to take care of it.Aesthetically I think this is just about the most gorgeous knife under $300, the lightning kurouchi is beautiful and it's complimented well by the Damascus, which patinas nicely. My one comment is that this blade came with a slight bend in the edge about 2/3 up the blade, however after my first sharpening it was barely perceptible and is now long gone. This is a newer maker, and less expensive than the Takefu Masters, and so for the aesthetic and performance value I'm more than willing to overlook that and still happily give 5 stars.
