Moritaka AS knives use the highly regarded Aogami Super Carbon steel as the core of these excellent blades. The AS inner core is clad with a soft iron that is given a kurouchi finish (the remains of the forging process). As well as enhancing the aesthetic quality, the finish aids with corrosion resistance. The kurouchi finish is deep and dark and one of the finest examples we've seen. This knife is still reactive and will rust, so proper care and maintenance are required.
The blades are very well crafted and feature a convex grind which is symmetrical on both sides. This knife gets quite thin behind the edge, befitting a petty. It is not a tall blade and, together with the thin profile, this makes for an adroit slicer of small ingredients as well as a great choice for garnish preparations and the like.
With a hardness of 64 to 65 HRC the core steel will take and hold an extremely acute edge. But it will be easy to keep sharp too.
